You can use coconut oil in place of butter or other oils for cooking, with one caveat - like strong olive oils, it has a slight scent/flavor. I like it with foods that are going to be on the sweet/savory side rather than the salty side. So, yes to chicken and pork, depending on the seasoning, but no to fried eggs.
The easiest way I've found to add it is in my coffee. A teaspoon plus a splash of half and half or cream for, well, creaminess, works best for me. The oil tends to sit on top even after stirring, so if you want it really blended you need to shake a for a few seconds in a closed container or use a hand blender. 2405 days ago

I went 3 months without a race, although I am in training, but my first race was indoors, a 5K fundraiser in Chicago! It was so liberating to finally get to beat the race-fever building.
