    Coconut have been, and still are, a very important ingredient of my culinary life. As a kid I remember helping my dad make coconut oil from scratch during a labour strike leading to a shortage in cooking oils. However, a word of caution...my dad had also told me to heed these words "the less coconut oil you consume the better". I come from an island in the Caribbean...down there we make many foods with coconut as the flavour ingredient...but we seldom ever use the oil. And I'm sure that you're well aware that coconut has earned a very bad reputation amongst the health gurus...I know that the water of a dried coconut (y'know, that brown nut you get in a specialty grocery store) can be used as a laxitive, whereas the water of a "green" coconut along with the "soft" jelly is highly desired amongst the island people, including moi... Most of our culinary delights with coconut as the main ingredient use the flavours derived from the dried coconut...bread, sweetbread, cakes, condiments, curries, stews, etc...
    We've always used vegetable margarine or olive oil on our toasts and salads...and cocoa /chocolate drinks come from the cocoa fruit (nuts) which are completely different from a coconut.
    To use the dried coconut you simply break it, drain the water, remove the "hard" jelly from the shell of the nut...grate and soak in water...strain the coconut milk in a bowl...you can soak the grated jelly twice for maximum use. Use the milk for cooking, kneading breads, etc. For cooking vegs, curries, stews...boil some milk in a saucepan until only the oil remains then saute your stuff...or add the grated jelly (after draining) to bread and cake mix for baking.
    If you Google it you'll discover a whole new world filled with coconut usage. BTW...you can get the coconut milk in cans...a whole lot easier to use...but you'll also have to deal with the added chemicals used for long shelf life.
