Huge salad for dinner! Romaine lettuce, grape tomatoes, edamame, 2% cheddar cheese, and fat free balsamic vinaigrette. Yum!
Veggie flatbread sandwich with roasted red pepper greek yogurt spread, provolone cheese, red onion, tomato, and cucumber. A banana and baked pita chips on the side. 
Vegan kale burger and 3 cups of veggies!

Homemade veggie pizza for movie night!
What do I get after a long tiring day at work? An egg sandwich on whole grain bread, a whole tomato cut in wedges, and microwaveable edamame steamer. Not bad for a 5 minute meal!
I'm really excited about this meal! I baked vegetarian "chicken", sautéed fresh green beans, and cut up some tomato and cucumber. Since I had extra calories to spare, I added some light ranch for dipping. Yum! 😋
Dinner last night! Tortilla chips, vegetarian "ground beef", cheese, lettuce, tomato, and a dollop of sour cream. It was delicious and hit the spot!
Veggie "kielbasa", okra, and long grain wild rice. Water to drink, of course. A very satisfying work lunch! 😋
