Transformation Workout time!Flex time! Preparing to train for my first bodybuilding contest in 2018.Sauna time - soothing to the muscles after weightsThis was over the summer...trying to gain back arm definition after a three month hiatus from weights. Getting back on track with workouts and most importantly - nutrition.Got home late - light dinner...cocktail shrimp and 8 oz kombucha...Ate a vegetarian meal for lunch at a great vegetarian/vegan place. I’m neither, but the f of was great! I didn’t even have the overly full feeling. Had kombucha as well. Bought a jug of kombucha to drink over the course of a week.Tonight’s dinnerEncore of salad for breakfast! Decided to shake it up a bit. Spinach, red onions, Roma tomatoes, avocado, shrimp. Bragg’s Apple Cider Vinaigrette. Had my kombucha when I woke up. About to prepare myself for a morning run.Running alongside my kids as they ride their bikes. Love my babies - they keep me active.❤️ Today’s selfie pic - I look a hot mess and so does my mirror! Lol. House cleaning time!Posted a photoMorning start: cup of kombucha prior to eating, spinach, red pepper slices, red onion slices, half of avocado. Sprinkled apple cider vinaigrette (and literally just a sprinkle). Topped with an over-easy egg. Pinch of salt and pepper to taste.Run time: hoping to run 3 miles nonstop today. It’s been a challenge with running after knee surgery couple of years ago, but bought a knee brace - helps a lot!Run completed! Ran 3 miles but had to stop a few times to catch 5 year olds in time before they fell off their bikes. Lol. I think I need to step up my distance. I am registered for a 10K in April.So this is lunch: tofu miso soup package with veggies (added five shrimp for more protein).What’s left of blueberries, strawberries, and kiwi. My breakfast. 😁😁Tofu salad on top of rice called “The Monk.” Could only eat a little but it was good!!Snack!I’ve survived Monday! Yesssssss!!! Here’s to a successful week of healthy eating fellow Sparkers!❤️Oatmeal and in a cup this morning along with two boiled eggs. I was rushing! Lol.Kale Apple Veggie Salad for lunch.Starbucks salad. Guys I have a confession...had some Christmas cookies at my work meeting this morning. 😣 but eating healthy lunchDinner tonight!Avocado spread on toast with sliced tomatoes. Coffee to go. 🙃Spiraled butternut squash, homemade spaghetti sauce, salad.Finishing up the homemade spaghetti sauce...on top of sautéed squash and onion.Went for a run with kids. 2.88 miles my run app tracked but pretty sure I did 3 (forgot to unpause after we stopped for a minute).Late lunch. Not the best picture, but certainly filling! Pinto beans (not canned) and green beans.All my children at their broccoli first before moving on to the other items on their plates. Wow. Impressive!

None. My skin is healthy. Working from the inside out works and that starts with the foods I eat. #healthyskin #plantbasedWhat I had to drink this morning - Turmeric Kombucha - along with a high protein bar that’s plant based.Herbal tea time! Also found out that rose water facial spray doesn’t agree with my skin...skin broke out...😱 Cheers my fellow Sparkers!☕️Workout completed for the morning! Hit the gym and did some cardio and lots of weight lifting. I have a 10k I signed up for in April...and hopefully I can be in shape for my first competition for bodybuilding. Let the training begin!Not the prettiest looking meal but it’s healthy and filling! Red onion, super greens veggie patty, sweet kale salad (has cabbage and Brussel sprouts too). Added a touch of BBQ sauce to veggie patty since it has smoky flavor. Also 1/4 of fresh avocado.Wanted to share this about the benefits of garlic and onions!Snack time!! 😬😬Late lunch - worked out as well today.I’ve indulged tonight...rice pasta shells and basil/garlic polenta - both covered with organic pasta sauce marinara with sautéed mushrooms and onions. I did use a saucer instead of a full size plate...portion control. 😄😄Posted a photoDinner: lemon kale salad and northern beansTonight’s dinner: squash, onions, mushrooms with organic garlic pasta marinara sauce.Dinner tonightMy coworker tempted me with the delightful breakfast taco (potato and egg) and I told him “no thanks!” I had to snap a picture. Lol. But yesssssss!!!!!! *(doing happy dance)*Dinner last night: Garlic tofu & broccoli over spicy curry quinoa(with mushrooms and onions). It was delicious!!!!Tofu, mushrooms, onions, broccoli, and garlic in teriyaki sesame marinade. Added ginger and crushed red peppers. Will later cook this and serve over sprouted brown rice.Over a month into vegetarian lifestyle and I feel FABULOUS!! Best change I’ve made and I am learning soooo much more about how I eat! My body is loving the nutrients and it’s showing!!Finished dish: tofu, mushroom, onion, broccoli in teriyaki sesame marinade - added crushed red pepper and ginger. Included chia/flax mix (2 tbsp). Over gaba Brown rice with red bell peppers.Toasted sesame Ezekiel bread topped with sunbutter (sunflower butter), bananas, and raspberries. Followed by a nice wonderful warm cup of coffee.🙏Lazy dinner tonight.Crunchster snack: Smokey balsamic - mung beans.This salad along with a cup of pinto beans. Ate the salad with no dressing. I did have jalapeños, banana peppers, and cilantro added to my salad. Delicious!Lunch!Dinner! Pinto beans, sweet potatoes, mustard greens, pico de gallo ❤️❤️❤️ Thanks to my very loving bf who brought me this dishVanilla almond and flax seed granola with fresh blueberries and bananas. Almond milk.Lunch: tofu, broccoli, red peppers, onions, and walnuts sautéed in light soy sauce/garlic with sweet potatoesWorked out 1.5 hours today: 30 minutes of cardio, kept heart rate at 157 for most of the 30 minutes; 45 minutes of weight lighting/squats; 15 cool down.#BeforeAndAfter. This picture is after one child. I got bigger after having my twins in 2012. I stopped taking pictures because I wasn’t happy with what I saw. Now 4 kiddos later, I’m healthier than ever! It’s possible to get healthier! If you ever doubt yourself - STOP. Have faith and keep pressing toward your goal. Veggie chili topped with pico de Gallo and extra cilantroSimple dinner: sprouted oats and honey with almond milkSliced sweet potato with mustard greens and mushroomsField Roast’s Apple and Sage Vegan sausage (made of Yukon good potatoes and apples) with red and green bell peppers, red onion. Sautéed on stove with olive oil. Added salt, pepper, and powder garlic.Ok, so I got lazy today: veggie chili mixed with quinoa and brown rice. Yummy.Picture isn’t much, but made a smoothie. I used a protein drink (vegetarian) as a base with a little frozen mixed berries, fresh cucumbers slices, carrots, spinach, and strawberries.
My lunch.Greek Salad...yummy!!Lunch: Vegetarian Italian sausage, zucchini, red bell pepper, green onion, red onion, bella mushrooms, spinach, with 2 tbsp of honey balsamic vinaigretteSnack: toast, sunbutter, and strawberriesFor those interested! 1 sausage is 220 calories, 8 grams of fat, 13 carbs, 2 sugar, 25 grams of protein.
@lowfatvegan90 minutes workout today with weights and cardio.Called Sweet Sweat - Workout Enhancer. I rubbed it on and put a band (waist trimmer) around abs and workout. When I tell you I was pouring sweat, I was pouring sweat. Love this stuff.I was craving this: grilled cheese with slice radishes and mushrooms. Bread: organic power seed. Had a side of cabbage to go with my grilled cheese.Lunch earlier....another vegetarian delight!Dinner! Tofu miso soup with mushrooms, green onions, and seaweed.Had the honor of doing a photo shoot today...something I never imagined I would ever do. Attribute this new found boldness to healthy living ❤️ Thank you Sparklers for your encouragement along the way!I went from over 270 lbs in 2014 to this currently. Still have more weight to lose. My story is your story! Hope this encourages someone to know that you are the master of your health and YOU can do this! Mind over matter. Making progress toward goal of competing later this year. Eating is going well and workouts.Still working out my friends. Summer activities with kids, work, planning vacation with my honey is keeping me busy! My “me” time is when I hit the gym for my workout! Still working on my goals!My boyfriend proposed to me! I said yes! ❤️ Love him so much! He’s so supportive as I continue to work on my health goals!
