Back on track, slowly but surely

Saturday, May 03, 2008

After months of hemming and hawing, I'm finally getting back with the program--albeit slowly. I think the reason why I burned out so quickly and completely last fall/winter is that I started off with an all-or-nothing attitude, and that doesn't work for me at all. What I've been doing since then is gradually introducing new healthy foods into my diet. I switched from white to whole grain bread, and from low fat to nonfat milk. A big problem for me is that I live on a limited income, so I can't always afford to go to the grocery store to buy what I need. Consequently, my intake of such necessities as fresh fruits and vegetables often suffers. Ultimately what it boils down to for me is that I can only do my best, and gratefully accept any results I get from my efforts.

Shari - Which brand of whole grain bread do you buy? Do you like the taste of it? I've been trying different breads, but besides the oatmeal bread I haven't found one I really like. I'm glad you're back, too./ AprilMay1956

I *just* thought of you, and stopped in to see how you are doing, and look at that, you just were blogging! I am right there with you on the food affordability thing, and have recently been getting better about accepting good frozen foods, which can ironically be "fresher" due to quick freeze processing than some "fresh" (non-local) veggies!!! I am a big edamame fan (soybeans in or out of their shell), and they are very easy to prepare, I just thaw and add a little bit of sea salt to the pods, and we just go at it! I am also into making an easy 3+ bean salad with whatever beans I have around (black, red, kidney, chickpea, green beans, etc.), a diced red/green pepper, and a dash of quality dressing to add a little flavor. A good, cheap dish!

Shari, I'm so glad to see you're back, Happy Spring ~ keep in touch! Let's Spark!
