Spiced Nut Mix

This is a favorite at my house! I make a big batch on the weekend and divide it up into baggies to grab and pack in my lunch for work. Everyone in the house loves it! Hope you do too!

1 cup raw pecans
1 cup raw almonds
1 cup raw pistachios
1 cup raw cashews
1 cup raw pumpkin seeds
1 tablespoon pure maple syrup (I use raw honey instead)
1 tsp. curry powder
1/2 tsp. red pepper flake
1 tsp. dried rosemary


Recipe calls for 1/2 tsp of salt, which I do not add.

Mix the nuts and seasons together in a large bowl and toss to combine. Add the honey and toss to coat. Pour mixture onto a baking sheet and spread it out. Bake in oven at 350 degrees for 15 - 20 minutes. Be sure to use a spatula to loosen up the nut mix as soon as it comes out of the oven. Otherwise the honey will just stick like glue to the baking sheet!

This nut mix can also be used as a garnish on Indian inspired dishes. It has a wonderful savory taste to it. Don't be afraid of the spice mix, it is not hot.

    Yum. You know ever since starting spark, I have never been so enamored with snack sized baggies. emoticon I always have snack sized portions (always weighed and measured) of my favorite treats on hand when I have a taste for something particular. Ends up saving some calories already having them divied up. Woohoo.

    Wowsa...I think you just saved me from my bad popcorn spurges when we attend the movies...thank you dear Carolyn..this sounds absolutely delish! So healthy too...I adore pistachios..but always thought they had too much fat..now I hear that they can actually prevent cancers...who knew..I'm going to get the ingredients for this and make it up pronto...you are THE BEST for sharing...

    Sounds great! In fact it sounds similar to a spiced pecan recipe that I ate one time in New Mexico. It also had the sweet glaze and the zing of red pepper (and I could eat it a LOT of it--unfortunately---in my pre-SP days.)

    The curry in yours sounds great--I love Indian food! So I'm going to try your recipe, and bag it up in individual servings--to keep me honest. My husband and I will love this!
