Penne with Cherry Tomatoes and Ricotta

1 cup cooked whole wheat penne
2 cups cherry or grape tomatoes, halved
1 cup low-fat ricotta cheese
4 tablespoons chopped fresh basil
2 cloves garlic, minced
1/2 teaspoon salt
Freshly ground black pepper
4 cups arugula or mixed salad greens
2 teaspoons extra virgin olive oil
Combine the penne, tomatoes, ricotta, basil, garlic, salt, and pepper. Serve over a bed of arugula. Drizzle with extra virgin olive oil.
