Today is Friday, which always makes me happy! And it is a medium carb day, which makes my tummy happy!!! LOL!! I have beef on my menu twice a week and I usually choose a low carb day to have beef, because beef fills me up in a way that chicken and fish do not.

So, let's get the day started!


Starting off breakfast with my steel cut oats with a chopped apple and a tbsp of sunflower seed butter. mmmmmmmmmmm! I've decided to include things I love to focus on while I am eating my meal. On this table, my favorite table, is a picture of my mother and me dressed for church. I am four in this picture and my mother is pregnant with my baby brother.


My second part of breakfast of 4 egg whites and 1 whole egg scrambled and topped with fresh salsa. On dining room table are my favorite pictures of my husband and I from our beach vacation about 8 years ago. It was the first time we went on vacation as a couple.


Small indiscretion. One of the guys in the office was celebrating his birthday today and brought in a huge fruit platter to share. These were not in my cooler and were not in my plan. Two strawberries, a couple blueberries and a little black coffee.


Mid morning protein shake! Chocolate! Need I say more? On my desk are pictures of my family at the beach the year after my husband and I went alone. This is my favorite family picture.



Tuna salad in my whole wheat pita today. Albacore Tuna, roasted red pepper, red onion, and Trader Joe's Tuscan Italian Dressing.

I had a little extra tuna and used some leaves of romaine lettuce to scarf them up!


Mid afternoon snack! 1/2 scoop of chocolate protein shake with a tbsp of Colombian instant coffee! mmmmmmmm! Great pick me up!

I left work a little early today! Stopped by the tanning salon and headed to the Goodwill to look for a few clothing items so that I could have something that fits me! I found some cute stuff! I love wearing tropical colors and I found some pretty things! I take an arm load to the dressing room. I slid on the first one, my favorite melon color and a cute cut knit t-shirt, it fit so nicely and . . . it's a medium!!!! I have NEVER worn a medium!!! I was wearing a 2x a year ago!!! I'm wearing a medium!!! I ended up leaving with four new knit t shirt style tops, one hooded cardigan and the cutest skirt you have ever seen! Okay, maybe I overstate. But it is a very feminine skirt that comes right to my mid knee with soft pink flowers AND . . . it twirls! Yep, I turned around in circles in the dressing room, it twirls!!! I'm a girl in a twirly skirt again!

A trip to the grocery store to load up on all the yummy foods I need to get me through the next two weeks. Lots of broccoli, lean proteins, asparagus, Fage 0% Greek Yogurt, eggs, limes, avocados, apples, etc. No workout tonight! It's my rest and recovery day so that I will feel strong and ready for my 'long run' tomorrow morning. My 'long runs' are only 3 -4 miles right now. I'm in a recovery period before I start training for my next half marathon.


Tonights dinner is delicious! I sauteed some extra lean ground beef with red onions and mushrooms. Added in a cup of steamed broccoli and topped it with a little freshly grated parmesan cheese. 1/2 cup of sweet potato on the side! Man, I get to eat the best foods!!!

I hope that you are inspired by some of the yummy foods you see here. More than that, I hope that you are encouraged to surround yourself with things that are beautiful and that your love dearly while you are preparing and enjoying your special meals. Make your life beautiful, surround yourself with love and live passionately.

    One day last week I got in 120g of protein. I thought I was doing so well until I read your stats! Amazing! You inspire me to keep trying the protein thing. I seem to top out at 90-120 and my carbs are still more than my protein. Your food blogs have given me some great ideas, though. Thanks a bunch!

    Fantastic blog...the food selections look awesome! And I love the picture idea. When I eat I try my best to use really PRETTY dinnerware and a candle glowing softly with beautiful music playing. Once I get my vision board completed I'm going to have that somewhere within sight too...besides feeding my physical self...I'll be feeding my spiritual self as well..yip! emoticon emoticon emoticon

    I am a resale shopaholic. I love a great find, I just picked up a burgundy leather jacket for $2.75 the arms were long and the cuffs cracked due to neglect. The leather shop charged me $10 to clean and short sleeves appropriately, it looks brand new and feels like butter. May's super find. I keep a scrapbook of those type of finds.

    Love the idea of the photos when you eat your meals! That's a great idea! I'm always thinking of my to-do list and worries that our family have right now. Also, looking at your loved ones makes you think of them as part of why you want to get healthy, for yourself and them!
