So one of my challenge’s for the month of August is to replace one meal with a salad. Now I love salads and I can think out side the box and mix things up, but August is a long month and I wonder how I will be doing by the end of the month.
I started out the month with greens, raw onion, jalapeno cheese, and topped it with my turkey chili. This has been one of my favorite ways to eat my leftover chili for years. Tonight I grilled chicken breast for my lunch salad tomorrow. I have cucumber and tomato from our garden and will add some baby carrots. A friend from work is bringing in some corn and black bean salsa that she makes and that will be my topping.
I’m thinking fruit salad for breakfast one day and I have light Caesar salad that I will probably also add chicken to. Then I have another of my favorite salads which is just baby spinach, carrots, feta and a light Italian dressing with some grilled shrimp. And avocado on a salad will be scrumptious too!
So many choices and this is just day 2!
Oh yeah, blogging is also one of my challenges - I hope I don't run out of things to blog about....
