The Corn and Black Bean Salsa

One night when I went out to eat with friends I wasn’t thrilled with the salad dressing choices so my friend suggested salsa as the dressing. I thought what the heck and tired it. So yesterday when a friend from work mentioned bringing in her homemade corn and black bean salsa I thought I would try that on my salad today.
I put together a standard salad with romaine, baby spinach, carrots, cucumbers and a grilled chicken breast. I topped it with her salsa and it was so delicious I can’t wait to have another.
I too make a corn and black bean salsa, but I use corn on the cob that I’ve grilled. After today’s tasty meal I will be making my salsa soon so I can try that on a salad. You know, I could use salmon on the salad in place of the chicken. That would also taste great with the salsa.
