The Corn and Black Bean Salsa

One night when I went out to eat with friends I wasn’t thrilled with the salad dressing choices so my friend suggested salsa as the dressing. I thought what the heck and tired it. So yesterday when a friend from work mentioned bringing in her homemade corn and black bean salsa I thought I would try that on my salad today.

I put together a standard salad with romaine, baby spinach, carrots, cucumbers and a grilled chicken breast. I topped it with her salsa and it was so delicious I can’t wait to have another.

I too make a corn and black bean salsa, but I use corn on the cob that I’ve grilled. After today’s tasty meal I will be making my salsa soon so I can try that on a salad. You know, I could use salmon on the salad in place of the chicken. That would also taste great with the salsa.

So many choices…

    Droooling over here. I do add beans to my salad and I have added salmon and salsa. I have never put it all together. Could you write down your recipe for the salsa.?

    MMM, sounds interesting. Do you have a recipe for her salsa? Good idea~ That's the hardest part for me is the dressing, I still eat ranch.

    Yum! Love that thought! Have tried salsa in addition to other goodies on salad, but hey, no reason not to go salsa all the way, baby! I can NEVER get enough salsa of ALL varieties, but yes, DO love it with corn & black beans too!
