I just found an amazing sparker, Pookie, who has lost 183 pounds since she joined early last year. Incredible! There is hope for all of us. So WHY haven't we done it? Another spark friend has set a goal to lose 1 pound a week. That's 52 a year. That beats coming up to another new year, having regained enough to be closer to start than to goal.
Pookie shared these amazing ideas for using cottage cheese in ways I hadn't considered.
Here are a few ideas she shared:
Unsweetened cocoa powder + sweetener
Unsweetened cocoa powder + sweetener + peppermint extract
Unsweetened cocoa powder + sweetener + instant coffee granules
Unsweetened cocoa powder + sweetener + instant coffee granules + walnuts
Unsweetened cocoa powder + sweetener + peanut butter
Cinnamon apple sauce
Mashed banana + almonds
Blended smooth and set in sugar-free jelly (jello)
As a topping for oatmeal, maybe with honey if you can have the carbs
Dried mint + finely chopped cucumber
Fresh chopped chives
Curry powder + chicken + apricots/peach + raisins
Chopped dill pickles
Finely chopped hot chili peppers
Garlic + ginger + lemon
She also has links to recipes.
I have replaced ricotta with cottage cheese in lasagna.
I've mixed jello powder into cottage cheese and added pineapple, yum.
I use cottage cheese in my lime jello dessert, that my niece calls Church jello because it shows up at carry-in dinners. It also has whipping cream, marshmallows, pineapple and walnuts. It takes awhile to make so I haven't done it in awhile. Looks like I need to make some adjustments to shave calories, too.
Most of the time I add fruit or tomato to cottage cheese, so she has inspired me to try some of her ideas.
