Green Tomatoes, herbs, Clams and Fish

We have the threat of a frost tonight so we had to clean out the gardens. I was amazed at how many tomatoes were still on the vines. There were a few almost ripe, but the majority of them were green. My husband would like to try fried green tomatoes, but I’m not thinking we can make them very healthy. Don’t get me wrong I would love to have them too, but I don’t need another excuse to eat badly. I have a recipe for green jelly, but neither of us are jelly eaters. We also had a neighbor give my husband some pickled green tomatoes that I may try to make. So many options…
We also have a bunch of basil, parsley, marjoram, rosemary and oregano that we brought in. We can use some of that for the tomato sauce we are making tomorrow with our ripe tomatoes. This batch I vow to freeze a portion off. The last batch we made we used throughout the week, which put me over my calorie range when we made baked ziti. I just couldn’t resist – that sauce was fabulous.
The clams are the healthy meal I am making for the day. We cook them on a broth (usually seafood, but today vegetable) add Thyme and fresh garlic and then grill them until they open. We eat them as is and they have enough flavor to not need any butter. Delish!
The fish are the ones in our outside pond not food. They needed to be moved inside, so I went fishing today with a net and actually caught something! We drained the pond and are starting to buckle up for the winter. Right now I’m sitting out on my back porch with a fire in the chiminea while the sun sets and the grill heats up for dinner. It is so peaceful.
