Green Spinach and Eggs... oh and Grilled Veggies!

No, it isn't "Green Eggs and Ham" but try them I think you will like them! Can you guess my favorite book from childhood?
This morning I was getting lunch out of the refrigerator and saw the left over grilled red pepper and onion from dinner the other night. I quickly changed my breakfast from cereal to some scrambled eggs with the grilled veggies and I also added some baby spinach. Oh, that was so tasty. In the past I have also used the left over veggies to top a pizza, which I usually make on a pita bread to keep my calories lower.
I have to remember to make sure we make extra grilled veggies more often. They are one of my favorites. I could even cook them on the George Foreman during the winter when it is too snowy to use our outside grill. Yum, Yum
