Chicken and Apple Sausage

I have blogged a few times regarding my husbands and mine sausage making. Our brother in law had bought a partial pig and had all these packages of sausage that he did not like. He asked us to come over and doctor it up so that he didn’t have to throw it away. We added some additional lean pork to it because of the fat content and then started adding different spices. I think the end result was pretty good. We had dinner with them and grilled a coil of it. They went back for seconds so I think they are happy too. I think it is funny that people come to us for sausage help.

Oh yeah, my title is about a different sausage that we had made weeks ago. My husband pulled a package out yesterday so he could have the Chicken Apple Sausage for breakfast. This one is more of a breakfast or stuffing type sausage. I just had some and it made me want to tell you how wonderful it tasted. The best thing about making our own sausage is that we can make it leaner than store bought. Some people like it fatter, but what we make is so much better for us.
