I had a wonderfully productive weekend!!! I started making a 'to do' list every night at bedtime with the things that I want and or need to get done the following day. I have ADD and since I cannot seem to figure out what I want to be when I grow up (little inside joke amongst my friends) I am always going in no less than three directions at one time. Having the list helps keep me moving forward to accomplish some things that move me closer to my goals. I put everything and anything on the list that comes to mind. It is so freeing for me to not have to 'remember' everything and it helps me stay focused.
This morning I got up early and got to work right away on my 'to do list'. While I was getting a few things done, I thought it was the perfect time to pull out the cookbook I got from Amy (Fitchick75) for Christmas. It's called 75 Ways to Love Your Oatmeal. The author of the book Jenny Grothe has a Facebook page that I subscribe to and always shares the best recipes! I couldn't wait to try out her recipe for Blueberry Cheesecake Baked Oatmeal! I had bought all the ingredients that I would need and the weekend is the perfect time for me to try out new things.

The recipe was easy to follow and the ingredients all fall into my clean/lean eating lifestyle. It smelled delicious while it was baking! I could hardly wait to dive into it. It takes 30 minutes to bake. Which worked out great for me. I was able to check a few things of my list while it was baking.
Doesn't it look yummy? The ingredients are old-fashioned rolled oats, water, baking powder, vanilla, fresh blueberries, Torani sugar-free caramel syrup, egg whites and fat-free cream cheese.

I'm not sure my pictures or words could even do justice to how amazing my breakfast was this morning. On a cold winter morning this really hit the spot. It was rich and creamy tasting and had that curl up with a good book feeling. I have marked to make Strawberries and Cream Baked Oatmeal, 6-Grain Blueberry Baked Oatmeal, Peanut Butter Banana Split Baked Oatmeal and Nutty Oatmeal Breakfast Bars. Every recipe that Jenny has shared with me online has been amazing so I have no reason to expect anything less than yumminess with every bite I take!

On the food front, I have been 100% on program today! In my calorie range, and all macro nutrients right in line!
Exercise was also right on the money. I did 25 minutes HiiT on the elliptical and then had a guy in the gym help me out with the lat pull downs that I am working on to doing pull ups. I have a spotter help me pull down the lat bar and then I do the release (concentric) phase by myself.
Here is what my workout looks like for this week:
Monday: Workout B Strength Training Session
Tuesday: Teach yoga, Hiit on the elliptical & work on pull ups
Wednesday: Run 3 miles
Thursday : Teach yoga, Workout A Strength Training Session
Saturday: Run 4 miles & Workout B
