T Minus 54 Count Down - Cookbook & Recipe Review

Sunday, January 16, 2011

I had a wonderfully productive weekend!!! I started making a 'to do' list every night at bedtime with the things that I want and or need to get done the following day. I have ADD and since I cannot seem to figure out what I want to be when I grow up (little inside joke amongst my friends) I am always going in no less than three directions at one time. Having the list helps keep me moving forward to accomplish some things that move me closer to my goals. I put everything and anything on the list that comes to mind. It is so freeing for me to not have to 'remember' everything and it helps me stay focused.

This morning I got up early and got to work right away on my 'to do list'. While I was getting a few things done, I thought it was the perfect time to pull out the cookbook I got from Amy (Fitchick75) for Christmas. It's called 75 Ways to Love Your Oatmeal. The author of the book Jenny Grothe has a Facebook page that I subscribe to and always shares the best recipes! I couldn't wait to try out her recipe for Blueberry Cheesecake Baked Oatmeal! I had bought all the ingredients that I would need and the weekend is the perfect time for me to try out new things.

Here is a link for the cookbook if you would like to check it out:

The recipe was easy to follow and the ingredients all fall into my clean/lean eating lifestyle. It smelled delicious while it was baking! I could hardly wait to dive into it. It takes 30 minutes to bake. Which worked out great for me. I was able to check a few things of my list while it was baking.

Doesn't it look yummy? The ingredients are old-fashioned rolled oats, water, baking powder, vanilla, fresh blueberries, Torani sugar-free caramel syrup, egg whites and fat-free cream cheese.

The nutrition facts:
Calories 263
Fat 4.17g
Sodium 548.99mg
Carbs 36.58g
Fiber 5.75g
Sugars 4.08g
Protein 20.5g

I'm not sure my pictures or words could even do justice to how amazing my breakfast was this morning. On a cold winter morning this really hit the spot. It was rich and creamy tasting and had that curl up with a good book feeling. I have marked to make Strawberries and Cream Baked Oatmeal, 6-Grain Blueberry Baked Oatmeal, Peanut Butter Banana Split Baked Oatmeal and Nutty Oatmeal Breakfast Bars. Every recipe that Jenny has shared with me online has been amazing so I have no reason to expect anything less than yumminess with every bite I take!

Doesn't that look divine?!!

Count Down Accountability & Plan for This Week:

On the food front, I have been 100% on program today! In my calorie range, and all macro nutrients right in line!

Exercise was also right on the money. I did 25 minutes HiiT on the elliptical and then had a guy in the gym help me out with the lat pull downs that I am working on to doing pull ups. I have a spotter help me pull down the lat bar and then I do the release (concentric) phase by myself.

Here is what my workout looks like for this week:

Monday: Workout B Strength Training Session
Tuesday: Teach yoga, Hiit on the elliptical & work on pull ups
Wednesday: Run 3 miles
Thursday : Teach yoga, Workout A Strength Training Session
Friday: Hiit
Saturday: Run 4 miles & Workout B

That's my plan! It's on 'the list'! What's on your list this week?

Yummy, those recipes sound amazing, I can't wait to start trying them!

My plan for the week is to stay on track with my nutrition and fitness and utilize the strength training plan you worked up for me. So far so good, except for the small curve in my plan when I had dinner with friends to celebrate a birthday. I didn't do too bad but it's hard at a Hibachi type place.

    Thanks Carolyn!

Yummy! I love oatmeal. Just this morning, I had my oats with unsweetened applesauce & 1/2 tsp of cinnamon. Really great on a cold morning.

I'm with everyone else....I need that cookbook! Yummo!

I'm a to do list kinda girl....I LOVE my lists. Before on I go on a vacation I will make this huge list weeks (or months) ahead of time and then I spend the in between times sporadically buying anything new I need so that I don't have to run out and spend money on it right before leaving, and weeding out the stuff I don't want to take. It's a little nutso, but it keeps me sane.

    Have a wonderful week!

Oh god, now you've made me really hungry. Good thing I'm off to eat my own oatmeal soon. Cream cheese, huh? I may have to come up with a vegan option but that does sound really good -- thanks for sharing!

The syrup concerned me, too. I probably couldn't find it here anyway, but the "sugar-free" caught my eye. Is it really considered "clean". Inquiring minds want to know. Sounds delicious, though.

Thanks for sharing. I am definitely going to try that recipe. I have everything but the syrup. I suspect that it will be hard to find in Canada but I'll figure out a substitue. This will be a Saturday morning treat though. There is no way I'll ever fit in a breakfast that takes 30 minutes to prepare on a week day! Maybe on a mental health day....

OMG that looks fabulous.. but I'll use steel cut oats instead cuz I don't like the texture of rolled oats.. but otherwise, SIGN ME UP!

And thanks for your comment on my page.. what you said about being too strict increasing my chances of a rebound binge really rang true.. so today I had some butternut squash and salad.. and I'm cooking my weeks worth of steel cut oats right now.. so tomorrow morning will be YUMMO!

    Thanks for another great blog!
