I posted this in my class team folder trying to encourage everyone to eat the rainbow this month!
March is National Nutrition Month
Your goal this month should be to eat the rainbow! Here is a breakdown of the importance of color in our foods:
Red: These foods have lycopene in them. They are beneficial for for certain cancers, especially prostate. They are also powerful antioxidants. Examples: beets, cherries, watermelon, red peppers, and tomatoes.
Orange and Yellow: These foods have carotonoids in them. They are good for vision, immune health, heart health and are a good source of Vitamin A, C, and Folate. Examples: carrots, yellow peppers, pineapples, peaches and butternut squash.
Green: These foods have a pigment called chlorophyll giving it the green color. These foods have lutein in them. They are high in magnesium and folate. They are beneficial to reducing cancer, improving eye health. Examples: spinach, broccoli, green grapes, limes, and avacados.
Blue and Purple: These foods have some of the highest antioxidant values protecting your cells from damage. Some studies show that eating blueberries can help with memory and aging! Examples: Blueberries, blackberries, plums and eggplant.
White: (not breads!) These fruits and veggies contain allicin which is beneficial for heart health, cholesterol, blood pressure and stomach cancer. They are also a good source of potassium. Examples: garlic, onions, bananas, and parsnips.
