Thanks for the Easter Menu Sparkpeople!

Thursday, April 21, 2011

In an attempt to stay within my goal for calories over the weekend, I spent the extra time necessary to peruse the Sparkrecipes and have built my menu completely around what I found. emoticon

We are attending the Sunrise service this year, so our celebration will be a "luncheon".
After Sunday I'll blog on the success of the recipes, but they all sound really good, and different. The key is what types of fat used. Greek yogurt, olive oil etc.

These items are on the Sparkrecipe option.
Chicken and Celery Salad
Quinoa-parsley Salad
Carrot Salad
Italian Pasta and Veggie Salad
Deviled Eggs

I'm also going to have sugar free lemonade, a veggie platter, fresh berries and an angel food cake.

Planning ahead helps me stay focused.

Hope you all have a blessed Easter Sunday, and enjoy celebrating our Risen Savior with friends and family. emoticon

I have fixed the Quinoa-parsley Salad and it was a big hit. Reminded me a lot of Tabuli.

Best wishes and a Happy Easter to you, my friend.
    Easter Greeting

E ach time a seed dies to give birth to roots
A nd sprouts a stem to grow a leafy vine,
S o out of the new stem grows grainy shoots
T he vine extends in bright leaves full of shine.
E ach time a flower comes lifting its face
R eaching out with good fruit in its due time,

G ifting us in its living, humble grace,
R esembling God's loving act so sublime.
E ach seed dies and produces many seeds,
E ternal seed dead, buried in the ground.
T hat one blessed Easter morning He succeeds,
I n His death offers life to all around.
N ow, we must do the same and learn to give.
G iving, like Jesus did, frees us to live.
