So in my zeal to prepare a super nutritious, low fat, high fiber luncheon for Easter, I guess I forgot to consider a couple things.
#1 Just because I am looking to eat for optimum fuel doesn't mean the rest of the family is.
#2 When trying new, very different recipes, don't make enough for an army when only feeding 8.
Well lesson learned....HOWEVER, I'd do it again, just in smaller portions.
The Chicken Celery Salad was amazing and one of 2 menu items everyone loved.
The other was the Veggie Pasta Salad....huge hit.
I got flack for deviating from my classic deviled egg which has always been made with mayo and sweet pickles. The new recipe was good.....but not as addictive. Which for big mama, is a good thing!
The Quinoa salad was very yummy....3 out of 8 loved it.....I just made way way too much. Being new to the Quinoa trend, I cooked 3 cups which yielded nearly 5 cups cooked....so lesson learned there. I will definitely make it again....but a much smaller portion.
The carrot salad was good too. But far, far different from the super creamy sweet salad my dad in law is used to. Raised in Kansas, the whipped salad capitol of the world, it was too "lean" for his liking, It was a hit with 2 out of 8.
Dessert was loved by all...I skipped it....as I did sneak a couple chocolate eggs from the kids baskets.
All in all, I'm glad I forewent the sodium laden ham, scalloped potatoes and green bean casserole....as for the family.....they'll thank me tomorrow when they can zip their pants and get their rings on!
