Maybe that should be 'It went where?!?' As in, 'Where did the day go?'
Yesterday we went to the nearby National Trust estate and I walked three miles in an hour. I didn't stay on the main paved paths, but took a couple of the 'deer trails' meandering around. I suppose you get more of a workout (of sorts) by walking over uneven ground with rises and dips and the occasional slope.
I was hoping to do that today, or at least something similar, but doncha know, it rained most of the day, and rained pretty darned hard too. Eh. So it goes.
How's this sound: supper consisted of salmon poached in orange juice (does it sound fancier if I say 'saumon a l'orange'? hah), fresh green beans (so crisp they practically snapped back), sweet-potato steak fries,* tossed salad, and fresh strawberries. See, the thing is, I've become quite the lazy cook. If it's 'fiddly,' if it's time-consuming or requires a lot of monitoring or everything has to be measured just so and timed just so, then I don't bother. Simple works for me, but it's not 'simple and elegant,' it's 'simple due to laziness.' Not that there's anything wrong with that, IMHO!
*Think of steak-fries, but make them with sweet potatoes or yams, and baked, not fried. Peel the spud, cut it into steak-fry-size pieces. Spray a baking sheet with nonstick spray - I use an olive-oil based one, so it's a little healthier than the ersatz butter ones - and lay out the sweet potato pieces, then lightly spritz the tops of them with the nonstick spray. Bake at 400F / 200C for maybe 20 minutes, and voila. Tell me that's not good.
I can't really eat potatoes as the BG goes up sharply in response, no matter what I eat with them or how they're fixed. Consequently, not having them means I've kind-of / sort-of lost my taste for them. I've used brown rice for ages, but even that doesn't work well for me anymore - any kind of rice, even basmati and jasmine, spike my blood glucose, so I just leave them alone. In other words, I don't have 'those kind' of starches or carbs as a rule. But it's different with sweet potatoes.
Beats me as to why. I still weigh my portion, to make sure the calories don't get out of line, but they don't seem to have quite the same reaction in my system as white ones, so having them occasionally is a treat. And strawberries are always welcome.
Including the usual emails / housework / kitchen stuff, the day has been totally routine. But I still don't know where it went.
