There’s not a lot going on with me currently. I’m looking to lose a couple of pounds before I go home for a wedding next week but, beyond that, I’ve just been concentrating on eating good foods and not tracking my calories. Also, I’ve been cooking a lot. Here are some of the meals I’ve made in the past few weeks (Psst! Everything made is vegan!):
I made this for Passover. It was a huge hit with everyone! My friend even asked me for the recipe! If I ever make it again I think I’d want it to be a LITTLE less salty though.
Mac & Cheese
It’s really hard to make a vegan cheese sauce. This one was made with miso and cornstarch. It was good but it didn’t really taste cheesy.
As you can see…kind of a failure. It just DIDN’T solidify. It was made with tofu, almond milk, vanilla extract, sugar, and maple syrup. I’ll try it again but maybe with a firmer tofu or something.
These were great! Really time intensive since you're roasting the peppers, cooking the quinoa, and sauteeing the veggies all at the same time. They came out fabulous though! Definitely keeping this recipe for a long time!
My friends LOVED this bread pudding. I made it with bananas and chocolate chips. I wasn’t actually much of a fan. I wanted it to be richer. I think next time I’ll use cornstarch instead of wheat flour and maybe try a glaze on it.
Easily, my new favorite recipe! It’s SO simple and tasty! I find it super difficult to find vegan breakfasts and this is just perfect. It’s definitely going to be in my recipe book for the rest of my life with very little changed!
Chocolate Chip Pancakes
Tasted like normal pancakes which is all you can hope for when it’s vegan!
I have NO IDEA when and where and how I would use these. They’re little balls of peanut butter, coconut, maple syrup, oats, and dark chocolate. I was supposed to bring them over to my friend’s place but she canceled on me and now I have 20 little bite sized treats I’m not sure what to do with. Hopefully, my roommates can help me polish them off before I do so in one sitting!
Beet & Tofu Salad
This was surprisingly amazing! Roasted beets in garlic and rosemary on a bed of beet leaves and spinach, topped with tofu. It was amazing!
And that’s all my current food adventures. Slowly, yet surely, I’m learning the ins and outs of cooking! One day, I might even just be able to make something on the fly!
