How are Meatless Monday’s working into our meal plans?
This is all I had written in my original strong end plan. Really? Weak huh?
I had to smile because this week's strong end came pre-packaged for SUCCESS for a fruit and veggie lover such as myself thanks to Azure Destinations most AMAZING and AWESOME leaders who pretty much set us all up for success with the four day Freggie Dare.
I have to admit that they made it pretty darn difficult to aspire to perfection aka black-outs but I WILL get at least one and maybe two on Friday and Monday (fingers crossed). Do you suppose it is the Marine in me that makes me like this? I never considered myself competitive but I have been mapping this out and strategizing ever since it was published (had to get that pre-space you know) and while the weekend itself will be tough due to family time and commitments, I can make it happen on Friday and Monday with a little creativity. The most difficult thing for me to accomplish was actually finding new to me red and green vegetables and new fruits. Thankfully I have two excellent resources and a great relationship with the produce manager at one of them!
Meatless Mondays....As our impending move gets closer, my meal plans are admittedly going out the window and having to adjust and overcome obstacles and changes more and more frequently. Something this Type A/Little Bit OCD (is that an oxymoron) personality only does with moderate success. :::sigh::: So in the interest of full disclosure the answer to that is: NOT REALLY. You know what they say about the road to hell being paved with good intentions. Well they might want to consider a new road sign: THE ROAD TO OBESITY AND POOR HEALTH IS PAVED WITH POOR NUTRITION!
College daughter is home and she loves to cook and eat and coming home from cafeteria food she wants to cook and eat old favorites that are absolutely NOT healthy. Now may be the time for me to HAVE to break free from eating with the family or the same meals because otherwise, I won't make mission as we say in the USMC and that shouldn't be an option. She is still not "there" when it comes to nutrition and health because she is young and fit and doesn't really understand the benefits of eating healthy although I will say that she is my stepdaughter and just got back from a few days at her Mom's and has really talked about the difference in our pantry and refrigerator and her Mom's where they have hamburger helper, margarine, american cheese all things that you never find in ours. So she does notice. Her college is in Vermont and they buy locally and have all fresh dairy and produce but she loves to do things like yesterday at lunch she fried brats in bacon grease and ate THREE which clearly isn't something I can or should do. Oh to be a size 3. But I digress... Point being, I have made good changes in their diets and lives and will continue to do so. Baby steps. And for me....another week to look at where I am and where I need to be and how I can make it work.
Bring on the freggie dare!
