I tried to make chicken with feta and spinach (roll-ups.) I didn't make it by the prep. I eat chicken less than once a week and no red meat. I just have trouble stomaching food with veins, ligaments, etc. As I was pounding the breasts, the ligaments and stringy somethings separated from the meat (muscle)- I'm not trying to be gross, just sharing how my brain operates. I had to stop because I was ill. I asked my husband if he wanted to cook the chicken and he looked at the pile of what I called "good meat," ie, the part I was willing to eat and looked at me. He was a bit annoyed because I called him in from mowing the lawn. I figured the neighbors needed a break from the swearing... He said he didn't know what he would cook with the little bit of chicken I deemed edible. ahem, I did not share the recipe because there were no longer breasts to wrap aroung the spinach and feta. That would have given him too much teasing material... so it's trashed. I guess I will stick to nuts, greens, seafood and chicken that doesn't need tenderizing. Too bad I hate tofu.
