Spark Dinner

I made Chicken Oregano with Sweet Peppers for dinner.

I got the recipe from here on SparkPeople, and it was really good!
Of course, mine doesn't actually look quite that good... by the time I was done with it...
(I used red, semi-sweet wine instead of dry white, and I added fresh mushroom slices) It sort of looked like jumbalaiah... but still pretty yummy looking.

I normally do not like veggies a great deal, but I decided that I need to try some new things and try new recipes if I really want to lose weight in a healthier way... so this was one of my attempts to do so. First Spark Recipe Tried! Woot!

And today I was much better about keeping to my eating schedule, I only had one snack, and it was a Fuji apple(yum!). So I stayed on the low end of my calorie range today (YAY!).

I've also started tracking my calcium and my iron, so I can work on bringing those up, too. Day 2 of doing that, about halfway with the calcium and little less with the iron... Needless to say, I will be fiddling around trying to figure out what foods to eat in order to bring those up without busting my calorie ranges... But since I cook in cast iron pans, I do get a little bit of extra iron there...

emoticon Today was my jogging day. And I did GREAT! I walked 3 miles first, then started my jogging lap. And I wanted to do Monday's experiment over again, just to see how far I could get. The first jog section, I lasted SIX AND A HALF MINUTES! Woohoo!
Then I walked up the curve of a short but hard hill, past the first 2 mailboxes (in about 45 seconds) and then started to jog again... I only had to stop 3 times in the whole 1.5 mile lap. I think I jogged 1.3 miles today! AWESOME! I'm super impressed with myself! I finished the whole lap in 21 minutes... It was a slow jog, I know, but I did most of it jogging and I can inprove on my time after my body builds up its' strength and endurance.

I've already finished my required water, so everything else will be extra!

And even after all my snacking yesterday, I stayed at the same weight this morning!

Hopefully tomorrow the scale will be friendly!
I feel really good about today!

And today's weather was beautiful, sunny, and 68 F! That's right, nearly 70 degrees in the middle of December... I love it! emoticon emoticon emoticon

    I'm with EWL978 on the scale. I never weigh more than once a week. Everyone's weight fluctuates too much, even during the same day. And young women can fluctuate even more at certain times of the month because of fluid retention.

    I also try to weigh at the same time of day - first thing in the morning before starting to drink all that water.

    I just checked the temperature here in New Orleans. It's midnight and still 76 degrees. Supposed to go down to 39 tomorrow night!

    I'm impressed!! One thing I might suggest, if that's okay....don't let the scale run the show!! Why check it daily? Just asking for problems that way. Once a week should really do for you.

    Keep on keeping on and best of luck with this new way of life!!
