Hello, Sparkfriend!

Other than a bit of exercise, I have been completely useless today!

I did do my strength training this morning, and I went for a 4.5 mile walk (2 day streak!)

Absolutely nothing else.

So here is a picture of my peppermint fudge, which I finally cut up after dinner tonight.

They are very pink!

Here's how to make them!
•1 cup semisweet chocolate chips
•1 can (14 ounces) sweetened condensed milk, divided
•1 cup white baking chips
•3 teaspoons peppermint extract
•2 to 3 drops green or red food coloring
In a small saucepan, melt chocolate chips with 3/4 cup condensed milk over low heat, stirring occasionally. Line an 8-in. square dish with waxed paper; butter the paper.
Spread half of melted chocolate mixture into pan; chill for 5-10 minutes (let remaining melted chocolate mixture stand at room temperature).
In another saucepan, melt white baking chips. Stir in remaining condensed milk until smooth. Remove from the heat; add extract and food coloring. Refrigerate until set. Spread over chocolate layer; spread with reserved chocolate mixture. Refrigerate until set. Cut into 1-in. pieces. Yield: 5 dozen.

I know it seems like a lot of peppermint extract, but with the chocolate to counteract the taste it is yummy!

I've told myself to do a cardio video before I go to bed, just to make myself feel better.
I liked the number that my scale told me today, and I'm hoping it will show up again for tomorrow's weekly weigh in!

    Unproductive day? I try not to beat myself up too much for those, b/c when I look back on the thoughts I've pondered or the rest I got (physically or emotionally) those are actually pretty productive days. And they usually happen right before I make a pretty big step or break-through!

    The fudge looks delicious - and I just may make some. I have been trying some new recipes. Blixen40 has a great truffle recipe, which I made and gave away most of, to save myself from eating far too much. If that calorie count is right, I could even eat more than one piece of this fudge. Yum!

    I thought it might be the wrong numbers, too, but I double checked the recipe origin site and that's what it says! So I'll take it!

    That's not a lot of calories for fudge...especially with a can of condensed milk.

    It came out really well, as good looking as the picture yesterday...just a different color. emoticon

    AND, it's the Holidays! It's OK to take some time off! emoticon
