No gluten

I'm going to try to eliminate gluten from my diet for the next few days and see if it makes a difference with my stomach issues. I fear gluten is in a lot of things that I eat so it might be hard to find all the sources of it. Still, if I make an effort to locate most of them and I feel better, it will be a big step. This will make it harder to get enough calories unless I eat a lot of rice.

    Do you like Quinoa? It's got the protein you don't get from rice and doesn't have the gluten you get from pastas. Judith and I have substituted it for both. Since we are not in danger of getting too thin, we use it judiciously, but the calories are there if you want them. It's more expensive in small packages, but we get a 25 lb. bag from Amazon every six months. We serve it to guests too and haven't had anyone not like it.
