Quick and Easy Meals

I've been gone from SparkPeople awhile, but I started again, using SparkCoach, and am working on getting back on track and making it my life again. So, my SparkCoach "assignment" for the day is to blog a list of quick and easy meal ideas. In my house "quick and easy" is about all we do. My DH and I got married late in life and treat food more like roommates than most married couples. He eats a sizable meal at lunch daily and nibbles in the evening, often making a meal out of cereal. I try to pack a lunch--or to have social lunches out a few times a week. So our suppers are very much single meals. When I'm on my game, I cook a pot of something-or-other on the weekends and eat it throughout the week, either for lunch or supper. Often, I make a big pot of brown rice at the beginning of the week, or I buy the minute rice pre-cooked brown rice cups. Recently, I've found that I'm sensitive to wheat (maybe gluten?) and milk products. Some standard meals I like, taking that into account:
-rice/almond crackers, fruit, cheese
-PB&banana on gluten free whole grain bread
-rice chex and almond milk, fruit
-steamed veggies (just a bag of veggies in microwave) and almond milk
-brown rice and beans (if I'm getting fancy, I saute onions, celery and cook with beans)
-crockpot soup-of-the-week (whatever leftover veggies, chicken broth, maybe beans, and barley or rice)
-grilled chicken breast and steamed veggies, brown rice if I have made
-ww pasta with frozen veggies thrown in the pot while the pasta is boiling. Maybe add jar spaghetti sauce (or homemade in a good week)
-spaghetti squash with spaghetti sauce
-Fancy version: chicken (or faux-chicken) grilled with vegan cheese melted on it, spaghetti squash, and spaghetti sauce poured over the whole thing for "chicken parmesan"
-grilled fish with steamed veggies and brown rice (DH often has WW bread instead of rice in these meals)
