A Baked Potato

WOW, I forgot how much I love a baked potato, with skin. Do you know how much your restaurant bill is if you only have a baked potato? One large potato with 3 tablespoons of sour cream and lunch is 355 calories and two of you can walk out with a bill of under $5. My wife chose a baked sweet potato. You should see the waitress’ face when we turned down the hot bread, butter and peanuts in the shell. I love them all but I was not willing to write them down in my journal. Then I get home to my Spark Nutrition journal and discover that I have consumed 47% of my daily requirement for potassium in this one simple meal that I love. What a deal!
I’m on Day #74 of my 97 day journey and this was my first baked potato in 3 months. And the better news is that I didn’t gain any weight this morning. Life is good!!! I’m making progress toward my goal with 23 days remaining.
