Beautiful Tuesday

Today's weather was beautiful, not too hot or cold. However my heater came on this morning which was weird for an April.

So today, I went over the carbs and protein. I need to be careful, cause that will "turn up" my sugar. I grabbed a fiber one bar, which put me over, and I didn't even realize it.

I have rediscovered cottage cheese. I never really liked it but I put stevia on it, and fruit, and it is not bad. I do that with ricotta cheese too. That really is my favorite. I made some the other day with blueberries, strawberries and raspberries, and then when I wanted a snack, I went and got some of that. It was soooooo good.

    I'm a cottage cheese fan. I love it with a little sweetener and cinnamon. It's also very good with a spoon or two of homemade pico de gallo mixed in. I eat it at least once or twice a week as part of a meal.

    I love ricotta with pineapple and almond flavoring. DH uses cottage cheese in his smoothies. Any way you know where you are in regards to your nutrition when you track. Being a vegetarian I never knew if I got enough protein until I started tracking. I am not always over the minimum but I try. emoticon
