A GREAT idea

I have been back on the EAT to LiVE program. I'm pleased to hear that a few of you have been following it also and are experiencing significant weight loss. It really does work....more than anything I've ever tried....even not eating at all did not give me results like this.
Tonight I was in the mood for comfort food, but also wanted it to have nutritional value. Here's what I did:
I had a box of Annies's Organic Mac and cheese. I read the box...the sodium is high but if you only eat half the box (which is one serving) then it's not too bad. About 500 mg.
I cooked the pasta and then when there was four minutes left to the cook time I threw in a box of cut up veggies I always have in my fridge. I keep them in those clam shells that berries and other stuff come in at the grocery store. They are see through so I don't forget about them and if they start to go bad I can see that right away. But usually they don't have a chance to go bad....I throw them into or onto everything.
So I added those and then at one and a half minutes left I threw in handfuls of baby spinach. I drained it all and instead of milk I used a half cup of homemade soy yogurt.
Let me tell you....this was AWESOME. Now it doesn't really follow the ETL guidelines but if you deserve a cheat , it's a very good one and it still has nutritional value.
