Soup's On!

Sharing my recipe for Bacon Lentil Soup. It was a good excuse to clean out the fridge today. Hubby about fell over when he came home and I had lunch going. Before coming back to Spark People, I was in a bit of a funk and didn't care when or what I ate. I'm starting to feel that joy again from preparing nourishing foods for myself and those I love.

Chopping the veggies and enjoying the colors and textures on the cutting board. (Yes, I'm an artist!) The onion reminds me of a pearl with many layers.

Starting to cook up the ingredients.

Lentils thickening up. Steamy!

Ready to Eat!

I toasted a piece of low-sodium Ezekiel Sprouted Grain bread to eat with the soup. Since I ate a light breakfast, I think I'll have another bowlful!

    This looks incredible...thanks for sharing! I can relate to your nomadic yearnings and way. I am from GA, lived in FL a zillion years and was a " travel" occupational therapist for 10 years living in FL, UT, GA, and Alaska. Now working in Germany! I saw that you " friended " me,,,gonna add you as well. Happy Day to ya and lightness to your step whatever trail you are on!

    I'm always taken by the way the inside of a red cabbage looks when I cut one in half. The colors are beautiful and the patterns are enchanting.

    I make a lot of soups. I have a pressure canner, so I can a lot of stuff. I love that I can control how much sodium we get. My soups don't taste low-sodium, but they have half the sodium of commercially prepared soups. The Hubs has a lighter appetite than me, so I make half-pint jars for him. He refers to them as "little jars of love."

    When I'm tempted by a treat I know doesn't fit in my plan for the day, I read the ingredient label. Reading all that stuff - hydrogenated this, propylene glycol (the stuff in antifreeze!), palm oils, other things I'd like to avoid - is almost always enough for me to resist the temptation. It's not about calories or fat, it's about treating my body with the respect it deserves and fueling it with high-quality fuel. And it looks like your soup fits the bill!
