Chia Pudding

Chia seeds are full of Omega 3s and fibre, protein and manganese and calcium.


And everybody in the world but me probably already knew that.

But: bought some low fat coconut milk on the weekend (30 calories a cup) and stirred in 4 tbsp chia seeds, a bit of vanilla and (yup) some Splenda.

Put it in the fridge overnight -- and it's a simple pudding, a bit like tapioca in texture but a whole lot lower in calories. I really like it, had some for supper with a few blackberries and strawberries: and think I'll check out making "chia chews" or energy bars if I can find a good recipe . . .
