OK then -- it's still pretty wintery here and my pot o' soup for this week's suppers is hearty chicken barley mushroom: with extra protein from a can of rinsed chickpeas, lots of celery/carrots/onions/green beans/peas for colour and vitamins -- and finely chopped dill for last miniute freshness and flavour.
Next up: preparing lunch salads for a couple of days (spinach and bright peppers and carrots and radishes with some chopped beets: shrimp and avocado will be the star ingredients!)
Just keeping on track . . . and thinking about fitting into spring clothes soon!
