It's amazing how I never give up! I am back again a year later and still struggling to lose weight. I am not upset though, because I finally I have found a way of eating that I enjoy, is cheap, is easy, and makes me feel amazing.
I'm still totally plant-based, about 99% vegan, and eating really well. I'm also exercising, something I've never really done. I walk 5 km per day (weather permitting at this point) even in FREEZING temperatures (-16 with the wind chill anyone?) and I love how much energy I have.
So I'm eating about 1500 calories per day, which is creating a 500 calorie a day deficit which when combined with the exercise has be losing two pounds per week. I am super happy with this, obviously.
My only rules are that I eat one BIG salad every day, vegetables at every meal, and most days just two big meals equal to about 750 calories each. I had to stop eating so much rice because it's easy for me to overeat on that, but I just LOVE potatoes, yams, and squash, so I'm doing well eating those instead. I eat either some beans or lentils every day and I've found so many recipes that I just love. My current favourite recipe blogger is High Carb Hannah.
