Best-laid plans....

I planned today's meals last night. I knew exactly what I was going to have for breakfast, lunch, and dinner. And it worked. Until...


Mid-morning when I arrived home from dropping off kids and shopping for groceries, I was really feeling hungry. I had done a circuit training workout followed by a quick tabata workout this morning, so I knew I had every reason to need to eat something. When I saw my oldest daughter coming toward the kitchen, I decided to slice one of the ambrosia apples I had purchased and share it with her. It was awesome and curbed my hunger with a little help from the mid-morning cup of coffee I had already budgeted.

Then... My sweet husband was working from home today and wanted to take us out for lunch at the last minute. Mexican. Just a couple problems there...Mexican was not what I had planned for lunch...and it was what we were supposed to have for dinner. But I went along with it, of course, like the sweet and loving wife I am.


At the restaurant, we ordered drinks (water, please), and the chips arrived at the table along with the cheese dip and guacamole my husband had ordered us. He has learned how much I love guacamole, and while it's healthy, it can also be loaded with calories. Thankfully he and the kids helped me polish it off, and they demolished the cheese dip as well. I was counting the chips I ate, keeping the number below 10.

I opted for Veggie Lunch Special #2: 2 spinach enchiladas, Mexican rice, and beans. While waiting for my kids to help me out with the chips and guac, I entered all my food on the SP app and realized I was still within the calorie range I needed to be. I heartily enjoyed my lunch, happy I was eating as healthy as I could while out for Mexican.


No afternoon snack necessary after that hearty lunch! And thankfully I had picked up some healthy pizzas at the grocery store this morning. We'll have those tacos I had planned for dinner another night.


After dinner I headed out for a walk to burn off any extra calories and reach my 4,000 step goal. I nailed it quickly and came back in to watch the newest Pirates of the Caribbean movie with my family. I'm about to grab a Greek yogurt bar to reach the lower end of my range before spending time with my sweet hubby.
