Day Six of Vegan (Almost a Week In)

It's been pretty busy around here, so I haven't had time to update.
This week was pretty good. We did a really good job of meal planning and most of the meals were really good!
I can't say that I'm feeling different, but I did gain a pound this week. I was expecting it because a lot of the meals we made were high carbs (and I was eating them for lunch as well), but I think this week will be better, because I am going to change my breakfast and lunch to work better for my diet.
There are definitely inconveniences to eating vegan, but I bet it is a lot better than it was even just a few years ago.
The conference was definitely a pain, breakfast options were VERY limited, and lunch there was one wrap I could eat. Coffee had no milk substitutes, but thankfully they had an espresso machine set up and I was able to get a soy latte. It's also scary when you have diet restrictions/allergies to depend on the people there to know what's in their food. Like they could have told me something was okay, but maybe there's egg or cheese in it. I can see how people end up eating stuff they don't want to.
We are going to our friend's place tonight to watch Stranger Things, and they are making us vegan tacos. Tomorrow we will go and get our food for the week, and we are getting pizza tomorrow night, so that will be interesting.
On to week two!
