Spring Supper!

After my gym workout and trip to the library yesterday, also shopped a bit: my drawers clean-out last weekend meant I needed to buy some new undies and also "basic" white and black T-shirts which I wear very often all summer long under light suit jackets. No point in spending money on 'em: cheap or expensive, by the end of the season the white is greyed and the black is faded . . . but I do like cotton with a touch of spandex for fit and managed to find four bogo.

Then the grocery run . . .

Typically I cook dinner about once a week and very often it's simple roasted potatoes with olive oil and rosemary plus baked chicken thighs and lots of veggies. I'll often throw it in the oven while unpacking the groceries.

But last evening I was spring-inspired to make a rhubarb pie!! (My own rhubarb fell prey to the renovations but one of my work colleagues brought me in an enormous quantity from her patch last week and I'd taken off the leaves, washed, chopped and frozen . . . ). Just frozen vegan pie shells, frozen rhubarb and a little sugar, I like it TART!! Baking from frozen meant using some tin foil to ensure it was baked through: and in the last stages of baking, cutting out a centre "dough-nought hole" so that the centre cooked without over cooking the crust rims. It turned out perfect!!

Since I had the oven on, I also made (timing carefully, putting in sequentially) baked potatoes, roasted salmon with thyme and roasted fresh asparagus with olive oil. Mmmmm, lightly browned and crispy on the bottom, bright green and just tender: my fave method for asparagus!! There were cherry tomatoes on the plates and I had steamed some baby carrots too for colour but somehow forgot to put them out: enjoyed 'em for breakfast instead!!

Experiencing some DOMS from yesterday's workout -- and thinking kayaking could be possible today? Or golf?
