Meatless Monday

I've been working to eat more fresh food and more veggies and fruit. I really enjoy fresh produce so there is no better time of year to really pack in those freggies. I decided to incorporate meatless monday into my dinner routine because it fits perfectly with my objective. The thing is that I'm not going to mention it to my husband because he is very much a meat eater and I think if I mention it he'll be resistant. So my strategy is to find really hearty and delicious meatless monday dinners that he'll love so much he won't even be thinking about the meat that isn't there. I'm starting tonight with a classic minestrone. He LOVES soup and I'm packing it full of veggies, beans and pasta with a really delicious rich broth. I'm going to make grilled cheese on sourdough and a nice salad to go with it. I think he'll be pretty happy. I'll update the results and a photo of the soup later.

    You sort of sound like me. My daughter (age 33 - married and does not live with us) went vegan about a year ago after sort of toying with it for awhile. BTW her husband is a meat and potatoes guy. I would like to eat more meals that are vegetarian, too but DH would not support me. He gets upset because meal planning is more difficult when we do see my daughter. I don't think I could go vegan at this point even if DH wasn't an issue, but I could see doing vegetarian.

    Good luck. I hope you can come up with meatless ideas. Mushroom ravioli tastes very much like meat.

    I didn't want to use the veggie burger crumbles because then my husband would question it. As it was we just had classic minestrone and he loved it!! He didn't say a word about no meat in the soup. He even asked me to pack up a container for him to take for lunch tomorrow. First meatless monday, success!

    Yummy! Your dinner sounds amazing.

    We had a Meatless Monday too now that I think about it. I made lasagna with a ricotta cheese/Greek yogurt combination, a tomato puree sauce full of Cajun Mirepoix (onions, celery, green pepper), chopped mushrooms, diced tomatoes, topped with shredded mozarella.

    Have you looked into using TVP (textured vegetable protein) as a meat substitute in your favorite casserole recipes? With the right spices it will taste almost as good as ground beef.
