Guilt Free Nutella

No, not Nutella. But as far as I am concerned just as good and very guilt free. When I saw someone post on Facebook the other day that they had a breakfast of a piece of toast spread with "Nutella" made with a sweet potato and almond butter I had my doubts about it but tried anyway.
The jury is now in and I am a believer. The mixture has given me an all new excitement about plant based food. So easy to make. I put a large sweet potato in my instant pot and pressure cooked it for 12 minutes and let it natural pressure relief. You could cook it any other way that results in a soft sweet potato. I would suggest steaming them if you don't have an Instant Pot.
Take the meat out of the sweet potato and mash it smooth. To the mixture add a tablespoon of no salt almond butter. I love the one I get from Trader Joe's. Mix it and it is done. Let the mixture cool and spread on whole grain toast. I confess it is also very good hot.
As usual I did not stop there. I took part of it and mixed in a little unsweetened cocoa powder. Avery different mixture but so good. My husband and I had a taste test of each and couldn't decide which one we liked best.
Now to my favorite way to use this spread. Spread it on toast and put banana slices on top. Today I sprinkled a little cinnamon on top also. All I can say if YUM! Enjoy and let me know if you think of any other ways to use it.
