Low Carb Challenge

Two of my best friends are doing a pretty strict 30 day elimination diet. I didn't need or WANT to do anything that extreme, but I did agree to a strict Low Carb diet for 30 days. SOLIDARITY! … OR Misery Loves Company.
Last year I had gained about 10-15 lbs and at the end of the year, I went thru a very stressful period where I lost most of that weight in about 2 wks, on what I call the "Stress & Anxiety" diet. I don't recommend it.
This year, I had started to gain most of that weight back, so hence a solid month of strict low carb. I'm hoping this will be my jump start back to a regular low carb lifestyle.
This first week was a little bit difficult. For various reasons, I went out to eat much more than normal at unfamiliar restaurants. Two of these places were fantastic Tex Mex places that put chips & salsa on the table. Oh man.. I DO LOVE my chips & salsa. BUT, I remained strong and did not partake. Didn't even guilt trip my friends and family who did! LOL
This morning I did my week 1 weigh in and I'm happily down 4 lbs.
I'm start enough to know not every week will be like this, but it IS a great jumping off point.
