I went to see an allergist yesterday. She suggested that I omit all yeast and dairy from my diet. It's going to be very hard to do that but I'm willing to give it a try. I've ordered a book that she recommended: The Yeast Connection" and it should be here on Friday (I love Amazon!)
She explained that American wheat is tainted with chemicals, no matter what we try or where we get it. She said that one farmer may not use any chemicals but most seeds are genetically modified. Also, if the seeds are carefully picked by one farmer, seeds from a neighboring field will blow in the wind to the other neighbors field or the pollen is crossed from the bees. It totally makes sense but really saddens me to think about this. So many of our dear farmers are just trying to make a living and keep the country fed. Funny thing is that if we were to travel across the big pond to England, we could eat all of their wheat products and never have issues. It's all due to processing and chemicals used to keep bugs away.
I have totally failed at elimination diets in the past but this weight creeping up every year (more like month) has got to stop! I need to really find that little boost to get me going in the right direction because everything I've tried has failed. So, I';m going to take her advice and start with wheat and dairy elimination. She recommends high protein/low carb similar to the Paleo diet.
I know that I have no one to blame by me but I just have to find the drive or whatever it is to make me a healthier, happier person!
Don't be so hard on yourself--we have all put our trust and faith in gov & industry, The important thing now is that you act on what can help you. Just remember there is a learning curve-so be patient with yourself.
