Dietary Discipline on a Budget

Jesus talks about having your daily bread and being the bread of life, thus I'm not going to write bread off completely.

There was concern about aluminum leaveners, bromide additives, and dough conditioners. I didn't want to put all of that into myself or my children so I made my own bread. Not whole wheat but unbleached white.

There is a theory that whole grains contain lectins, which can be worse than mere white flour. As an intelligent design of the plant, your body cannot digest these and that's why the seeds and kernels are distributed to different places through our waste. Ensuring the propagation of the plant species -far and wide.

Instead of making bread for my family we have settled for low-carb alternatives. English muffins and flour tortillas. Instead of refined sugar I occasionally make myself a treat with erythritol. The seemingly most innocent of the sugar alcohols.

Erythritol won't poison your pets and it doesn't seem to affect digestion. It tastes far better than stevia, won't hurt your dogs and cats like xylitol, and won't have you doubled over like maltitol.

Instead of making bread, I cook a turkey or 10 pounds of chicken. I butter the pan, season the chicken with iodized sea salt, black pepper, and lots of minced garlic. It goes into the oven at 375 for an hour. I then let it cool and slice it up. It goes into containers in the freezer to make a quick supper, salad, or wrap.

Eggs are our dietary staple. When my guineas lay eggs in 3 out of 4 seasons, I have one of theirs every day. My parents raise chickens and so we are blessed by their egg ministry. Eggs are by far the most nutritional sources of protein in existence. Guinea eggs are higher in protein due to the bird's diet of bugs. They turn lyme-disease carrying bugs into nutrition-dense eggs.

The biggest negative of eating low carb and restricted is you get stopped up! My cousin had a wonderful recommendation of soaked chia seeds. Two tablespoons is the drv of fiber! A little cocoa and erythritol can make them more palatable.

The last thing is because I am insulin resistant I am still assaulted with deep valleys of blood sugar during hormonal arcs and divots. I am prone to migraine headaches if I'm too strict at the wrong times. Carb cycle to maintain and continue to lose. I definitely will have that pizza every month and occasional fast-food binge. It's a good idea to give into occasional cravings.

If not occasional, I will slip back into the habit of fries, chips, and sweets if I'm not careful. As a survivor body type I'm quickly back to the danger zone.

As for greens and veggies? Remember the readily available frozen chicken? It is perfect for salads, stir fry, and a variety of other recipes. If we have a protein we always try to follow up with a veggie on the side.

How to do this with kids? Sugar to kids is like food to Mogwai after midnight. A gremlin breaks out. If you have teens, you know it makes them act evil and break out. So while kids and teens should have a little more fun in life, moderation is key.

I'm always learning and trying to do the best for my family. I have certainly failed them and will continue to do so, but I want to keep learning and (by the grace of God) give them my best!
