...and I was able to log in what I ate and saved it for future logging. It’s a good place to eat meatless. They have “sofrito” tofu burrito filling and beans, grains, and roasted onions and peppers.
I am trying to analyze my habits and undo bad eating habits. Figure it out as I go and make adjustments. Not making everything from scratch. Trader Joe has precooked beans in sauce and frozen rice and quinoa. Vegan chili in a can. They also have a Tikka Masala seitan meal, vegan burritos, and a riced cauliflower bowl with garbanzo beans and veggies. And more.
I went through a period where I was constantly buying vegan ecookbooks because it was a fun creative outlet for me. Now I feel overwhelmed by them. Have stopped experimenting with cooking as much after I inflicted a series of recipe clunkers on my unsuspecting husband.
My work situation got to me to a point where I was coping really badly and very stressed out. If I was negative here I apologize. I finally was able to get myself back on track. I keep to myself at work except for people I’ve known a long time. I focus on doing my job and getting paid for it. I wasn’t going to write more blogs because I am unfortunately not Suzy Sunshine, but I enjoy writing and sharing my thoughts/journey. So here I am again.
Making Vegetable Curry for Sunday dinner with mixed grain pilaf and cauliflower. I save more complex cooking for once or twice on the weekend.
