Went to Chipotle for lunch...

...and I was able to log in what I ate and saved it for future logging. It’s a good place to eat meatless. They have “sofrito” tofu burrito filling and beans, grains, and roasted onions and peppers.

I am trying to analyze my habits and undo bad eating habits. Figure it out as I go and make adjustments. Not making everything from scratch. Trader Joe has precooked beans in sauce and frozen rice and quinoa. Vegan chili in a can. They also have a Tikka Masala seitan meal, vegan burritos, and a riced cauliflower bowl with garbanzo beans and veggies. And more.

I went through a period where I was constantly buying vegan ecookbooks because it was a fun creative outlet for me. Now I feel overwhelmed by them. Have stopped experimenting with cooking as much after I inflicted a series of recipe clunkers on my unsuspecting husband.

My work situation got to me to a point where I was coping really badly and very stressed out. If I was negative here I apologize. I finally was able to get myself back on track. I keep to myself at work except for people I’ve known a long time. I focus on doing my job and getting paid for it. I wasn’t going to write more blogs because I am unfortunately not Suzy Sunshine, but I enjoy writing and sharing my thoughts/journey. So here I am again.

Making Vegetable Curry for Sunday dinner with mixed grain pilaf and cauliflower. I save more complex cooking for once or twice on the weekend.

    Remember, the gist of these blogs is for you! Anything above and beyond, well, bonus. So, don't feel you have to be sunshine all the time! NOBODY is!

    I like how you're compromising on still experimenting or doing cooking, but the more complex recipes on the weekend. That's a good plan. Less overwhelming.

    Susmanie: You don't HAVE to be susie sunshine. When we face hurdles, sometimes it comes out in our diet and exercise habits. Better to vent and get support, I think!

    When I was working a gazillion hours in a stressful job and commuting a gazillion hours on top of it, I batch cooked for the week: breakfast, lunch and dinner. More on that on the McDougall Plan Check in and Chat later. Got to run to my less stressful non commuting job.

    Chipotles was rated once as the healthiest of the fast food restaurants. It beat out Panera which surprised me because of the sodium they have in their food. But when it comes to calories and good flavor they do a great job.
