I made sweet potato and black bean chili in the crockpot for dinner tonight, a new healthy and meatless meal. It came out very good. But I read the recipe wrong and only put in one sweet potato when it called for three. I thought there was something wrong when I was making it... But it came out very yummy and I will be making it again as it took me all of 5 minutes to put together and then had to cook. I had it with sour cream and avocado. Yum!
I forgot to mention something else good yesterday. I went to Target for my monthly run of household cleaning supplies and paper products, and I went through their clothes and found some really cute dressy stuff. I'm in between sizes right now, not really a large or an x-large, so I tried on both. The dress that I tried on didn't fit in the large, so I got it in an extra large, but the blouses fit in large, so I got those too. I also found a black jacket which is something I have been looking for since November. I am good on work clothes now and just need a second pair of black flats as my current pair is starting to get worn out.
I think I've mentioned that I have been working with the state Department of Rehabilitation and that they paid for me to go back to school. They will follow my case until I have a full-time job, which is great. As I am done with school (for the most part) and am now looking for work, I go to Job Club on Wednesday afternoons. Basically I check in with DOR and my case worker and then spend a couple of hours working on my resume, looking for a job, practicing interview questions, coming up with a 30 second elevator speech, etc. etc. I just started last week and it was very helpful. I started my resume which I'm going to finish tomorrow and then review it with Sandra (who's in charge). I'm also going to take my resume over to the community college at the end of the week and go over it with a career counselor. I'm being extra cautious as I'm not really sure how to write a resume for a business career, as the only resumes I've ever written were for teacher jobs. So hopefully it will go well and I will have a nice, polished resume by Friday.
I watched a show on photography at the Manzanar Concentration Camp tonight on PBS. It was very sad and interesting all at the same time. I have been reading more about that period of American history since going to the Japanese American National Museum last summer in downtown L.A. I pulled out my copy of "Farewell to Manzanar" by Jeanne Wakatsuki Houston. That will be my reading for the rest of the week.
Today I'm Grateful For...
1) New clothes that fit!
2) That Tang's vet appointment is in the morning. I just want to get it over with.
3) Yummy new recipes.
