Fried Rice

I have been logging every day this week. But I'm doing my evening meal the next day. Last night I made fried rice from a recipe that had high ratings on the internet. I've never attempted to make fried rice before and I'm not sure why.....it was so quick and easy. I had baked the pork loin a couple nights ago and made the rice the night before. The recipe insists that you make the rice ahead of time and refrigerate it. My husband really liked it and had to put away his second helping as he was too full to finish it. I put it in the recipe calculator today and if you are interested, I did share it.

Also, I weighed in this morning and I am down over 3 pounds WOO HOO!!!
