Time to start a new week!

This weekend passed in such a blur, but I feel proud that I got everything done on my personal check list. I made my home-made minestrone soup, pico de galo, chickpea breakfast cups, and prepped fruits and veggies for the week. I got in workouts on both days (woo hoo!)

Last night I planned on doing cardio, doing a "really good" workout - whatever that means. But as I looked through my at-home workout DVD's, I realized I didn't really want to do any of them. So instead I pulled out some simple equipment like my kettleball, bands, yoga mat, etc, and did a simple but effective at home workout. I didn't really have a plan - but I felt great about what I accomplished when I was done. Today I hit the trails and got in a beautiful walk out in the woods in the snow. I didn't see any critters out there, but I saw tracks of what looked like deer and a bear. I even brought some hand weights to hold while I walked (although sometimes I found myself just dangling my arms down, as if I forgot I had weights in them that I was supposed to be using, lol).

I have yummy, healthy meals packed for tomorrow. I'm going to eat breakfast and see if that helps with my afternoon cravings. I want to try a couple of oatmeal recipes this week, and I have a ton of veggies to use when my prepped food runs out.
