About Planning Meals

This week Black Panther Spring Challenge regarding nutrition is about planning our meals.

This is an easy task for me because living alone, I don’t necessary cook regularly anymore. I always have a good provision of frozen meals that satisfy my palate and my desire for variety. Since I discovered a few good companies that make exceptionally tasty and healthy meals, my life is easier since I just have to add a few vegetables or a few scoops of a well-seasoned Uncle Ben’s rice, this makes me and my tommy very happy.

However, sometimes I like to eat an omelet. My favorite one is with tomato and goat cheese, huge amount of onions and seasoned with a tiny bit of herbed pesto. It was part of my planning this week, and one of my tasks is to put a picture of it.

When I look at the picture, it really doesn’t give the right degree of the taste because it was really yummy.

    Yeah, I almost always hate my food photos. They just don't seem to do the taste justice. emoticon

    Personally, I don't like goat cheese. And, I definitely don't like tomatoes in my omelettes unless they're sun-dried. But, I'm totally on board with the omelette thing. It's a great way to get protein, veggies and some fat in an easy to prepare way. But, I've never tried pesto in an omelette. I'm thinking maybe some mozzarella cheese and some roasted peppers might be good with the pesto in place of the goat cheese and tomatoes. emoticon

    I live alone also and just cook for myself and for my little dog sometimes. Your omelet looks wonderful and sounds very tasty. I have never tried goat cheese in an omelet but now I will.

    I make a soup that I really enjoy with goat cheese, tomatoes and lentils. Goat cheese and tomatoes are a delicious combination!
