Flax, whole-wheat flour, quinoa, and natural peanut butter pack a nutritional punch in this recipe.
Quinoa-Banana Muffins

Ingredients
.25 C Quinoa dry
1.5 C Oats
.25 C Flax Seed Meal (ground flax)
.25C Whole Wheat Flour
2 tsp Baking Powder
.5 tsp Salt
3 Tblsp Water
.5 tsp Cinnamon
1 lg Egg
.25 C 1% Milk
2 med Bananas
.25 C Applesauce, sweetened
3 Tblsp Natural Peanut Butter
.5 C Milk Chocolate Candy (optional)
.25 C Walnuts (optional)
Directions
1. Preheat oven to 325.
2. Line muffin tin with cups or spray lightly.
3. Cook quinoa (boil with 1/2 cup water for 15 minutes).
4. Mix all ingredients well.
5. Put into muffin cups and bake for ~20-25 minutes.
