Bought a rainbow of fresh veggies yesterday - red, yellow, and green peppers, celery, carrots, cucumber, purple cabbage, and cauliflower - and tonight I chopped everything up into bite-size pieces. It's ready to grab for a quick snack, or to throw into salad or soup. When I make healthy choices like this, I feel good about myself.
