Deviled Eggs -

6 hard cooked eggs
Cut eggs in half.
Put yolks in bowl.

mix all yolks with
2 tablespoons mayo
2 tablespoons of soften butter
1 teaspoon mustard
1 teaspoon relish
salt & pepper ( to taste)

spoon mixture into egg white halves
dust with Paprika

Keep refrigerated.

Chocolate covered keto cheesecake fat bombs

8 oz. Cream cheese at room temperature

5 Tbsp. Grass-fed butter at room temperature

1/4 cup serve granular

2Tbsp. Coconut oil

9 oz. Lily's dark chocolate chips

Directions

In large mixing bowl add all ingredients except chocolate.

Mix with a hand mixer for 2 minutes

Scoop out cheesecake mixture and place on parchment paper on a cookie sheet. I make 24 balls because I found by making only 12 they were too big. But it also means you get 2 per serving.

Place in freezer for 10- 15 minutes. I leave mine a little longer it doesn't matter if you the second part a little later. As long as they are firm.

When they are firm enough melt the chocolate chips in a microwave safe bowl and melt in 20 second intervals. This will take 3-4 20 second intervals to completely melt if your chocolate starts to harden you can add a tsp. Of coconut oil to get the creamy texture.

Remove fat bombs from freezer. Using 2 forks dip each bomb into the melted chocolate then replace it on the parchment paper.once the bombs have hsarden they can be stored in an air-tight container in the fridge or freezer until ready to eat.

Beef Bacon Cheese Fat Bombs: ( you may use ground turkey in place of beef)

1 Pound Ground Beef
**error no egg in this recipe
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 ounces block cheddar cheese
9 slices raw bacon

MIX WELL - beef, onion powder, salt & pepper.

Cut the cheese into 9 small cubes.

Form 9 meat balls and then poke one piece of cheese into center of each ball. Seal well. Spray a cookie sheet pan with PAM. Place all balls on the sheet pan. Flatten each one slightly (chubby burger) and wrap one slice of raw bacon around the sides of each burger.

Bake 375 F degrees for 40 minutes. Until cooked through and bacon is crisp.

MACROS- For one burger-
Calories 235, Total Carbs 1 g, Fats 15 g , Protein 21 g, Fiber 0 g Sugar 1g.

KETO CHEESEBURGER HELPER

1 pound ground beef (80/20)

1tsp. Paprika

1/2 tsp. Onion powder

1/4 tsp. Garlic powder

Salt and pepper to taste

1 Tbsp. Tomato paste

1/4 cup water

2 cups shredded cabbage


CHEESE SAUCE

2 Tbsp. Salted butter

1 ounce cream cheese softened

1/2 cup heavy whipping cream

1 1/2 cups shredded cheddar cheese

Salt and pepper to taste

Crumbled bacon to top , optional

DIRECTIONS

1. Brown ground beef in large skillet or Dutch oven over medium heat until no pink remains. About 15 minutes. Drain excess grease and return the mixture back to the heat

2. Add the paprika, onion powder, garlic powder and salt and pepper.

3. Stir in the tomato paste and water.

4. Place the shredded cabbage into the skillet and fold into the beef mixture. Bring the mixture to a boil and cover. Allow the cabbage to cook for 15-20 minutes or until tender.

5. While the cabbage is cooking, prepare the cheese sauce. In a separate saucepan, melt the butter over medium heat about 45 seconds.

6.whisk in the cream cheese and heavy cream until smooth, about 1 minute. The sauce will start to form bubbles, continue whisking and reduce heat to low. Quickly stir in the shredded cheese and sprinkle with salt and pepper.

7. Turn off the heat and continue stirring until all the cheese is melted and the mixture is completely smooth about 1 minute.

8. Once the cabbage is tender, pour the cheese sauce onto the ground beef and fold into the mixture . Remove from heat and top with crumbled bacon if desired.

NOTES

Makes 4 servings

Low Carb Pumpkin Oatmeal Breakfast Bars

1 cup flaked unsweetened coconut

1/2 cup sliced almonds

1 cup raw shelled pumpkin seeds

1 cup almond flour

1/2 cup swerve sweetener

2 tsp. baking powder

1 tsp. pumpkin pie spice or all spice

1/2 tsp. salt

1/2 cup pumpkin puree

2 large eggs

1/2 cup melted coconut oil

1/2 tsp. vanilla extract

1/3 cup sugar free chocolate chips

1 Preheat oven to 325F and grease a 9x9 inch square pan. I used parchment paper

2 in food processor, combine the coconut, almonds and the pumpkin seeds. Plus until the mixture resembles dry oats. Transfer to a large bowl.

3 add the almond flour, sweetener, baking powder, pie spice and salt and mix well. Stir in the pumpkin puree, eggs, oil and vanilla until well combined. Stir in the chocolate chips.

4 Spread the batter in the prepared pan and bake 20-25 minutes until the edges are golden brown and the top is firm to the touch. Remove and let cool. Keep in the fridge in a air tight container.

recipe makes 16 bars

Pumpkin brownies- sugar free, low carb

I cup of pumpkin puree

1 cup almond flour

2 large eggs

1/3 cup granulated sweetener substitute

1/3 cup plus 3 T tbsp. Unsweetened cacao powder

1/4 cup coconut oil or melted butter

1tsp baking powder

1 tsp mixed spice or pumpkin spice

For the glaze, dark chocolate sugar free or at least 85% cocoa solids, melted for a drizzle optional


1 preheat oven to 350 Fahrenheit

2combine all dry ingredients in a bowl.

3add all wet ingredients. You can mix with a mixer or by hand.

4 check the sweetness and add more if required.

5 line a tin 8x8 inch pan with parchment paper and fill with the mixture.

6 bake for 25-30 minutes or until knife comes out clean. The brownies will be very soft in the beginning but they will firm up once cooled.

7 if desired, melt 2 squares of dark or sugar free chocolate plus 1 tsp of butter or coconut oil and drizzle over the brownies.

8 store in a air tight container in the fridge.

KETO RASPBERRY JAM

8 ounces frozen raspberries

2 Tbsp. Serve sweetener

2Tbsp. Water

2 Tbsp. Chia seeds

In medium saucepan over medium heat,combine the berries, sweetener, and the water. Bring to a boil and cook until the berries are soft enough to mash with a fork. Mash to desired consistency.
Remove from heat and stir in the chia seeds. Let iit cool. Transfer to a glass jar and refrigerate 2 to 3 hours to set.
Keep refrigerated . The jam will last up to a week.

Serves 20. Each serving has 4.5 g of carbs and 2.8g of fiber total net carbs is 1.7g

Making "CHAFFLES" ( combo cheese & waffle)

Use any small waffle iron, round or square.
Use as a bread replacement or add sweetener to egg for a sweet treat,)

One egg
4 slices or 4 ounces of any cheese ( I used Colby Jack slices)

Heat the waffle iron
Beat the one egg
Lay your cheese on the iron and watch it bubble
then slowly and even;y pour your egg over it.
Close the lid
Set your timer for 6 minutes. (or When the steam stops it is done)
DO NOT OPEN before it is finished!

The whole recipe is 2 Carb.
MACROS: Calories 232, Carbs 2, Fats 18, Protein 16, Fiber 0

Creamed Cabbage Ground Beef Casserole

Ingredients
6 slices no sugar bacon
1 1/4 pound ground beef
1 TBS. dry minced onion
1 head of cabbage cored coarsely chopped
1/2 tsp salt
3 TBSP. cold butter

Sauce
1/4 cup butter
1 1/2 cups heavy cream
1 cup water
1 tsp. xanthan gum
1 tsp Cajun seasoning
1/2 tsp. kosher salt
dash fresh ground black pepper

Instructions
1. Preheat oven to 350 degrees

2.Cook bacon in skillet, drain, chop and set aside.
3.in the same skillet saute the beef with the onion until brown . Remove and set aside.

4. Place the cabbage in a large microwavable casserole dish with cover, sprinkle salt tossing as needed.

5.Top cabbage with the thin butter slices, cover and microwave on high for 10 minutes.

6.Transfer half the cabbage to a 9x13 baking dish.

7.Top with beef mixture. Then the bacon.

8.Place remaining cabbage on top.

9. Prepare the sauce by melting the 1/4 cup of butter in the skillet

10.Add the heavy cream and water, sprinkle and whisk in the xanthan gum.
11.Cook on medium high heat until sauce is thickened. Remove from heat.
12.Whisk in the Cajun seasoning, salt and pepper. Taste and adjust seasonings as needed.
13.Pour the white sauce over the top of the cabbage casserole.
14. cover with foil and bake at 350 degrees for about 30 minutes or until casserole is hot and bubbly and cabbage is cooked through.

Notes for home made Cajun seasoning blend can be made by combining the following
2 1/2 TBSP. paprika, 2 TBSP. salt, 2 TBSP. garlic powder, 1 TBSP. black pepper 1 TBSP. onion powder, 1 TBSP. cayenne pepper, 1 TBSP. dried leaf oregano, 1 TBSP. dried thyme.

One Minute Chocolate Brownie in a Mug Cake
Ingredients
1/2 teaspoon coconut oil
1 tablespoon Sukrin Gold Fiber Syrup see note
*** I used 1 TBSP Torani SugarFree Caramel syrup + 1 egg as noted below***
1/2 teaspoon vanilla extract
2 tablespoons unsweetened cocoa powder I used Hershey's Dark
2 teaspoons coconut flour
1/2 teaspoon baking powder
1 1/2 tablespoons heavy cream more or less

Instructions
Melt coconut oil and sweetener in microwave for about 15 seconds.
Stir in vanilla extract.
Add mixed dry ingredients (cocoa powder, coconut flour, and baking powder)
Stir in heavy cream until thick brownie batter forms.
Microwave anywhere from 30-90 seconds to texture desired (less for fudgy brownies, longer time for cake-like)
Serve warm topped with whipped cream, if desired.
***Notes***
You can replace the fiber syrup with a granular sweetener like Swerve plus one egg. If you aren't using the fiber syrup, an egg should be added. 2g net carbs, 7.5g erythritol (or extra fiber when using fiber sweetener)

MEDITERRANEAN TUNA SALAD

Two cups Tuna in oil drained
2 celery stalks chopped
2 Tablespoons Capers
1 small can sliced black Olives
1 15 oz can of drained Butter beans ( adjust amount or omit if watching carbs)

WHISK dressing - and pour over tuna:
2 Tablespoon fresh Lemon juice
2 Tablespoons Dijon Mustard
2 Tablespoons Extra Virgin Olive Oil
Salt & Pepper
Red pepper Flakes ( to taste)
Toss well.
Serve on lettuce or Endive leaves

Stuffed Haddock or Flounder
Pre heat oven 350 F

White fish fillets
one sleeve Ritz crackers
1 stick of butter ( 1/2 in pats & 1/2 melted )
1 or 2 lemons juiced

In a 9" X 13" casserole place any white fish fillets close and single layer
Squeeze 1 or 2 Lemons juiced over fish
Place dots of butter ( 1/2 stick) all over the fish

In a bowl take one sleeve of Ritz crackers and crush finely with hands
Add 1/2 cup melted butter to the crumbs
Add 6 ounces of crab meat ( or imitation crab meat finely shredded)
mix all together well.
Now spread this mixture over all the fish in the casserole

Bake at 350 F for 30 minutes.

KETO Crust less Quiche - Spinach/sausage/Swiss

Large 11" Quiche dish
Preheat oven 375 F degrees

Ingredients:
4 large eggs
2 Cups Heavy Whipping Cream
8 Oz grated Swiss cheese
1/4 C fresh Baby spinach leaves
2 links Banquet brown & serve Maple sausages ( any flavor sausage will work)

Cook & Brown the sausages and cut them into tiny pieces
Scatter sausage in quiche dish.
Put the baby spinach leaves in dish.
Put all the swiss cheese in the dish
Mix the eggs and heavy cream well and pour over the top.

Place into oven at 375 F and bake 45 minutes.
Cut into 6 large pieces.
Serving size is 1/6 of the quiche.

Macros:
Calories 484, Carbs 4 g, Fat 45 g, Protein 17 g, Fiber 2 g

PORK EGG ROLL IN A BOWL

2 Tbsp sesame oil

3 cloves garlic minced

1/2 cup diced onion

5 green onions sliced on a dias (white and green parts)

1 pound ground d pork

1/2 tsp ground ginger

Sea salt and black pepper to taste

1 Tbsp Sriracha or garlic chili sauce

14 ounce bag of coleslaw mix

3 Tbsp coconut aminos or gluten free soy sauce

1 Tbsp rice vinegar

2 Tbsp toasted sesame seeds

Heat oil In large skillet over medium high heat

Add the garlic onions and white portion of the green onion. Saute until the onion are translucent and the garlic is fragrant

Add the ground pork, ground ginger, sea salt, black pepper and sriracha. Saute until the coleslaw is tender

Top with green onions and sesame seeds before serving.

Makes 4 servings

Calories 297 Fat 20g. Protein 20g Total carbs 7g Fiber 1.5g Net carbs 5.5g

** I served this with rice cauliflower to make it seem like fried rice.

Tequila Lime Chicken ( Pineapple juice may be substituted for the Tequila)

Make the Marinade: ( Refrigerate bag of Marinating Chicken overnight)
Place 2 - 4 boneless/skinless chicken breasts in a plastic bag with
1/2 Cup Tequila
Juice from 2 Limes
1/4 Cup Oil
2 Cloves Minced Garlic
1/2 Cup Orange Juice

In a Slow Cooker put-
The Marinaded chicken and all of the juices in the bag into the slow cooker.
ADD
1/2 Cup Tequila
Juice of 2 Limes
1/2 Cup Orange Juice
2 cloves Minced Garlic
1 Cup diced Onion
1 Diced Jalapeno ( seeded if you don't want spicy)
1/4 teasp Cayenne pepper ( omit if you don't want spicy)
1 TBsp Chili Powder
2 teasp Cumin
2 teasp Kosher Salt

What is a 48er = there is a group under Getting fit over 50 called Anyone born in 1948 = this is a thread for those from that group that want to share some recipes

Hello 48er's! thanks for your support in this idea to start a separate topic to share our favorite recipes & be able to get back & find them.

Last night I took a SparkPeople recipe for Eggplant Lasagna with Ground Turkey

I followed the recipe but used zucchini & ground beef instead of eggplant & ground turkey because that's what I had on hand. It was good.
