I just learned of a coleslaw from El Salvador. Pretty darn delicious. You can google Pupusas and the Curtido (slaw) usually is right next to it.
I use white balsamic vinegar, dried oregano, chili flake, salt/pepper, and a tiny bit of sweetener like agave. I've also used a bit of mustard too, whisk it all up and add it to shredded cabbage and carrots.
